I took a few days off to visit my friends Nora and Symphony in NYC! It was a fabulous mini vacation away with good friends, amazing food (including tiny raspberry tarts...mmmmmmmm!), a trip to both the MET and MOMA, a few walks though the park and a long stroll along the new high line! We had so much fun!

Paris in November! This is one of my very favorite photographs! I captured this image in Paris after walking 1,500 miles across Europe to get there, the rainbow was such a bonus! This is perfect for any romantic!!!♥

I wanted to make something yummy with rhubarb before the season was over and this morning was perfect baking weather! This recipe was very easy and so, so delicious! 
♥ I opted not to add the hazelnuts and cut back on the zest and OJ juice by half ♥

Serves 4

  • 1 1/2 pounds rhubarb, cut into 1-inch pieces (about 4 cups)
  • 2/3 cup granulated sugar
  • Zest and juice of 1 orange
  • 1 cup all-purpose flour
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon cinnamon
  • 8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
  • 1/2 cup rolled oats
  • 1/4 cup hazelnuts, skinned, toasted, and chopped (optional)
  • 1/2 pint fresh raspberries
Directions
  1. Heat oven to 350 degrees. Combine rhubarb, granulated sugar, and orange zest and juice in a large bowl. Stir to combine.
  2. In another bowl, combine flour, brown sugar, and cinnamon. Rub butter into flour mixture with your fingers until it is well incorporated and large crumbs form. Add oats and nuts and combine.
  3. Turn rhubarb into a 1 1/2-quart baking dish, scatter raspberries evenly over surface, and cover with crumb topping. Bake until topping is brown and crisp and juices are bubbling, about 45 minutes. Let cool slightly before serving.

 

I spent this past weekend in NH celebrating my dear friend Sara's bridal shower! We had so much fun!!! The shower was amazing...delicious home cooked food prepared by her mother and brother, the most beautiful cake that I have ever seen, a wonderful group of women and to top it all off we went berry picking in the afternoon and made pancakes with them the next morning!
